Moving on from Chittaurgarh, there are two express trains a day to Udaipur: the #9615 Chetak Express at 6.50am (3hr 30min), and the #2915 Delhi Sarai Rohilla-Ahmedabad Express at 1.45pm (4hr 15min); both invariably leave late.

In the opposite direction, the same two expresses go to Delhi (15hr-16hr); for Jaipur take the overnight Chetak Express (8hr), or the slightly faster #9770 Purna-Jaipur Express, which leaves early in the morning at 5.50am, arriving at 2pm the same day. The latter service is also the best for Ajmer (4hr 30min).

Traveling east to Bundi , you're better off catching the 2.30pm train, which follows a far more scenic route (try for a window seat on the north/left side of the carriage) and takes one-and-a-half hours less than the bus.
